Bourbon Barrel Program

 Single Barrel Maker’s Mark Private Select 

One of a kind, crafted to provide a distinct flavor that stands out much like our service. 

On November 5th, 2019 our team traveled to Loretto, Kentucky to create a barrel of bourbon. Below are the details that went into making this one of a kind beverage. The taste is part of who we are and exemplifies our desire to stand out by providing a memorable experience with each and every stay at our property. We hope your experience has you coming back again for another taste of how we Host. 

GRAINS 

Our barrel of bourbon starts with soft winter wheat and locally grown corn. It impacts the front-of-palate sweetness. 

WATER 

The only distillery with its own water source. A limestone shelf filters out all of the iron from the water and creates a better sour mash. 

YEAST 

The only 150 year old heirloom yeast strain used to ferment in 100 year old cypress wood tanks.

DISTILLATION 

Double distilled for a more refined bourbon. 

BARRELS 

American white oak receive a number three char. It caramelizes the natural wood sugars giving the bourbon pleasant vanilla notes. Each 525 pound barrel is rotated by hand to ensure proper exposure to different temperatures in the rack house. It usually takes six to seven years for the bourbon to age properly.

STAVES 

Once aged the barrel is re-opened and 10 wood-finishing staves are inserted. We selected baked American 2, seared French Oak, Maker’s 46 and French Mocha staves. Once the barrel is closed it ages for another nine weeks in the limestone cave. 

BOTTLE 

The result is intense flavors of vanilla, caramel, spice and toasted notes. Always bottled at barrel proof and hand dipped in red wax.
